Spiros recipe of the month: 20-minute pasta recipe

Every month, we’ll be serving up an extra slice of homemade deliciousness with a brand new Spiros recipe – this time, we’re cooking 20-minute pasta!

When you love Italian food and cooking, a great 20-minute pasta recipe is essential. Throwing this meal together is quick, easy, and won’t break the bank, using several standard ingredients you can find hiding in the back of the kitchen cupboards.

The rumours are true – eating pasta makes you happier! Eating the carbohydrates in pasta increase the body’s production of serotonin, the neurotransmitter that scientists believe trigger feelings of happiness and well-being. Now there’s no excuse not to eat it!

  • 500g penne pasta
  • 500g chopped tinned tomatoes
  • 250g chopped mushrooms
  • 250g smoked bacon (optional)
  • 2 tablespoons of vegetable oil
  • 2 tablespoons of tomato puree
  • 2 cloves of chopped garlic
  • 1 medium chopped onion
  • Pinch of oregano
  • Salt and pepper
  • 4 oz water


  • 2 x large saucepans
  • Strainer / sieve

How to make it

#1 Fill a large saucepan with water, bring to the boil and add salt to taste. Boil the pasta for approximately 16 minutes.

#2 In another saucepan, heat the oil and fry the onions and garlic until transparent, add the chopped bacon, and cook for approximately 2 minutes.

#3 Stir in the tomato puree and cook out for a further 2 minutes, slowly stirring in the chopped tomatoes. Bring to the boil and then let simmer. Tip: if the sauce is too thick, add the water until you get your desired consistency.

#4 Add salt and pepper to taste and sprinkle with the oregano.

#5 Finally, add the chopped mushrooms and simmer for 10 mins.

#6 Once the penne pasta is cooked, drain well and mix with the tomato sauce.

#7 Serve with a sprinkling of parmesan cheese. Goes well with a green side salad and a glass of red wine, of course!
