Every month, we’ll be serving up an extra slice of homemade deliciousness with a brand new Spiros recipe – this time, we’re cooking decadent chocolate brownies!
A staple of the dessert world, a classic chocolate brownie recipe is a must-have for any kitchen baker. It’s shown up on Bake Off in one form or another each year, and it’s the dessert that never fails. An essential dessert dish on so many menus, the humble chocolate brownie is the perfect way to finish off a meal (or start your day – we don’t judge!).
The largest brownie ever made was (sadly) not a Spiros concoction. It was made at the Hudson Valley Chocolate Festival and Holiday Crafts Show in New York, in 2001. Using 750 lbs. of melted chocolate chips, the mammoth brownie weighed in at 3,000 lbs. Given enough time and forks, that’s definitely eat-able…

Decadent chocolate brownies
- 200g dark chocolate chips
- 165g salted butter
- 300g caster sugar
- 150g plain flour
- 15 g cocoa powder
- 4 eggs (beaten)
- Baking tray lined with parchment paper
- Large mixing bowl
- Bain-marie for melting chocolate (optional)
How to make it
#1 Place the chocolate and butter in the bain-marie until all fully melted (this can be a metal mixing bowl placed over a pan of hot water if you don’t have a bain-marie). Tip: do not let the mixing bowl come in contact with the water.
#2 Remove from the heat. Add the sugar and egg mixture that have been beaten together.
#3 Slowly beat in the flour and cocoa powder ensuring there are no lumps.
#4 Place into the lined tray, spread evenly and bake on 150° for approximately 30 minutes, until just set with a slight wobble.
#5 Allow to chill and cut into portions.
#6 For extra deliciousness, serve with whipped cream or ice cream.
